5 Dishes You Can Make From Scratch That Will Actually Impress People

Let’s be honest. There’s a version of you that wants to be the person who makes things from scratch. Who rolls their own pasta. Who presents a tiramisu and says, completely casually, “oh this? I just made it myself.” Hot, talented, mysterious. We love her.

That person is attainable, I promise. They just need to learn a few things first.

I’ve put together the 5 dishes that will get you there, the ones that actually land at dinner parties, that people talk about after they leave, and that require skills you can genuinely learn in an evening. No culinary school required. (Although, technically, we do run one. More on that at the end.)

1. Vodka Pasta

Vodka pasta is having a serious moment right now and honestly it since Gigi Hadid made it that one time we have been finding an excuse to put it on everything.

The sauce is this silky, decadent situation, crushed tomato, cream, parmesan, and a genuinely generous pour of vodka. And before you ask: no, the vodka isn’t just for the vibe (although the vibe doesn’t hurt). It actually pulls out flavour compounds in the tomato that nothing else can. Which is a sentence you can absolutely say at dinner like you knew this all along.

Make it with fresh pasta and suddenly you’re not just making a nice sauce, you’re making everything on the plate from scratch. Different conversation. Different energy entirely.

2. Gnocchi with Pesto Sauce

If you have TikTok and a pulse you’ve probably seen that Alix Earle and Alex Cooper are beefing. Two wildly famous superstars with more followers than the population of a small country and we’re meant to believe this isn’t coordinated? Sis. My hot take? PR stunt. Alix’s podcast left Alex’s Unwell Network in early 2025, nobody said a word about why, and then suddenly thirteen months later there’s a very public TikTok callout, a three-word reply, and the whole internet is talking about both of them again. How convenient. How extremely well-timed. I’m not saying I’m not entertained, I am deeply, embarrassingly entertained, but I am saying I see you both and I think you planned this.

3. Chocolate Gelato with biscoff

Okay hear me out.

Homemade ice cream sounds like a whole weekend project. Homemade gelato sounds like something you’d eat in a piazza in Rome. Same general concept, wildly different energy.

Whip up a chocolate gelato add Biscoff. Crumbled on top or swirled through right before it sets and boom!

Now your probably wondering, how on earth do I make gelato from scratch, never fear, I did think that one through…

4. Pumpkin Ravioli

Fresh ravioli is the dinner party dish with the highest perceived effort-to-actual-effort ratio going around right now and I think about this more than I should.

People see homemade ravioli and they assume you sacrificed your entire weekend. You didn’t. You had a focused couple of hours, you got your hands a bit floury, and you ended up with something that could not have come from a packet and everyone at the table knows it.

I humbly suggest filling your ravioli with roasted pumpkin, ricotta, a little nutmeg, parmesan. It’s sweet and earthy and creamy and it just works. Keep the sauce simple with brown butter, sage, maybe a handful of walnuts so we can let the ravioli shine.

You are now a person who makes ravioli from scratch. Congratulations, genuinely, I aspire to be you xx

5. Tiramisu

Tiramisu might genuinely be the most impressive-looking thing you can make that requires the least effort. And I mean that as a compliment to tiramisu of course!

No oven. No water bath. No blind baking anything. You’re soaking biscuits in espresso, whipping mascarpone, and layering it up. That’s it. The result looks like it came straight from a pasticceria window and people will absolutely lose their minds over it.

Make it the night before. Dust the cocoa right before you walk in the door. Accept the compliments with grace.

If you want to go a step above, serve in cute coupe glasses and you truly will be the favourite guest.

(Our tiramisu cooking class walks through every step — especially the bits that usually go sideways.)
