We wanted to take the time to introduce you to our chef!
Daniele, was born in Rome in 1986, since he was young he has always had a passion for food, spending a great part of his youth in Nonna’s kitchen, the best kitchen in world, learning from Nonna Teresa herself, how to make homemade pasta, ragù, lasagna, and every kind of typical Italian dishes, in the best traditional way.
From his 20’s he started his career looking for the perfect taste in every dish, working as a chef in Rome, improving his knowledge and his cooking techniques in the Italian cuisine. In 2014 he discovered the Pinsa Romana, a special pizza that found its origin in the ancient Rome. He studied at DiMarco, the only producer of the Pinsa Flour.
The Di Marco company has operated in the professional Pizza business since 1981. The head of this Roman business is a veteran in the bakery business that learnt the basics from his grandfather, a baker at a historic bakery in Rome when he was a child.
The flour mix used to prepare the Pinsa Romana (wheat, soy, rice, and sourdough), plus the high hydration level, and a totally different pizza making process compared to traditional pizza, make this product unique in terms of quality and digestibility.
Fats were eliminated from dough for the first time, and long rising came into fashion. A more digestible and fragrant product was preferred – an actual revolution in the Pizza business.
Daniele spent years at DiMarco learning the perfect technique to produce a faultless Pinsa. He learnt to mix the dough, and the importance that temperature has in producing the smoothest dough mix. Using his hands, he learnt to roll the dough to create perfect balls that guarantee the proving process is unflawed, rising to 2.5 times of its original size. And finally, he learnt to shape the bases delicately with his fingers to create the bubbly and airy product that you can only find at Flour Child St Kilda!
Since then, his passion for this unique product has continued to grow and he has become a Pinsa Romana expert within the Pizza industry.
